Let’s see.  Besides potatoes, I’ve been growing lettuce indoors.  Mesclun greens, their seeds meant to sprout in shallow soil and then the green leaves snipped early to top other dishes.

But my dish with shallow soil was kind of large and so I found myself with many greens that I decided to form into a nest.  And on this nest I placed a handful of brussels sprouts, chopped, and a couple of small leeks, chopped, and a bit of oyster mushroom found at the bottom of the fridge, also chopped. Before I placed them in their nest, these veggies and the fungi were sauteed in olive oil, butter and garlic and seasoned with salt and pepper.

Okay, there was some meat added at the end of the porcine variety but no pictures do I have of crisped bacon, and so this is as much of the recipe that I can share in images.  Í’ve placed the large dish aside until I decide what to sprout next.  So many seeds in the world.  I feel quite lucky.

Earlier this spring, I found a little potato sprouting in the pantry drawer.  I cut up the potato and planted the sprouts in a big green pot on a table next to several tall windows.  Lots of light shines down even through the widening leaves of the oak tree outside.  No high hopes for a great potato crop but I did have a wee hope to see just a bit of green poke through the soil.  Guess what?

I have in my midst what one friend described as “a lovely green monster” that any moment now is going to shout, “Feed me!”

Are actual potatoes growing beneath the dark soil? Will I grow my first potato crop ever in a big green pot sitting on a sun-drenched table in Somerville, MA?  Stay tuned, my friends, stay tuned.  😉

I purchased the little pot of fennel as an experiment.  Just to try growing something I’d never tried before.  After an initial mishap involving watering (or lack thereof), the herb seems to be doing alright.  Still haven’t really cooked with it yet, but I do love the shadows it casts.

“It’s just leftovers,” he said.  “Leftover mashed potatoes and a single egg.  The egg has a little fresh thyme mixed in but really, how much more simple can you get?”  Indeed. 😉

The May/June 2014 issue of Alive Now Magazine focuses on hospitality.  I’m grateful to have one of my photos appear in the pages.  It is a lovely, thought-provoking issue.  Hospitality is something I struggle with.  I know I’m not always as welcoming as I could be but I will endeavor to do better until the end of my days I hope. 😉  Learn more about Alive Now and the availability of this issue here.

Meanwhile, the scallions are a beautiful, unruly mess and the lemon thyme is creating great shadows on the bookcase.

The fennel I nearly watered to death but I think I caught myself just in time. We’ll see. 😉

An unexpected find in the pantry drawer this morning.  Tucked in the back, a small red onion and a few small potatoes had sprouted.  My father used to treasure such finds at this time of year.

He’d claim them from my mother and save to plant in the vegetable garden.  I consulted with my brothers who paid much better attention that I to the details of planting vegetables that have gone to seed.

I’m going to tuck these sprouts into some dirt in some big pots I have in the house.  I don’t expect I’ll get much of a crop but it will be fun to see what does happen.  Stay tuned … 😉
